Ingredients:
1. Carrot - 1
2. Elephant Foot Yam - 250 gms
3. Yard Long Beans - 4
4. Drumstick - 2
5. Madras Cucumber - 500gms
6. Raw Banana (Pachakaya) - 1
7. French Beans - 2
8. Turmeric Powder - 1/2 tsp
9. Red Chilli Powder - 1 tsp
10. Cumin Seeds - 1/2 tsp
11.Curd - 1 cup
12. Green Chilli - 3
13. Grated Coconut - 1 cup
14. Curry Leaves - 8 to 10
15. Coconut Oil - 2 tbsp
16. Water - 1 cup
17. Salt as needed
Method:
Step 1) Firstly peel, wash and chop all the vegetables in medium long sticks (carrot, elephant foot yam, yard long beans, madras cucumber, raw banana, french beans) and drumstick in 1 cup of water with turmeric powder, red Chilli powder and salt for 2 whistles.
Open the pressure cooker lid once the pressure has reduced.
Step 2) For Coconut Paste:
Grind the grated coconut with cumin seeds, curd and keep aside.
Do not make it a fine paste.
Make a thick paste.
Tip: If you want more spicy then you can add green Chilli while grinding the coconut.
Step 3) Now open the pressure cooker lid and pour the grinded coconut paste.
Let it boil for 2-3 minutes.
Step 4) Finally pour coconut oil and curry leaves in the avial.
Delicious Avial Ready!!
Step 5) Serve hot with steamed rice.
