Ingredients:
Baby Eggplants/Baby Brinjal: 5 to 6
Potatoes: 2 medium size
Onion: 1 medium size
Tomato: 1 medium size
Green Chilli: 6 to 7
Garlic: 7 to 8 cloves
Cashewnuts (Kaju): 8 to 10 (Halved/Broken)
Turmeric: 1/2 tsp
Coriander leaves for garnishing
Oil: 5 to 6 tbsp
Salt as needed
Method:
Step 1) Firstly, wash and cut into cubes baby brinjal and potatoes.
Step 2) Now in a cooking pot add properly diced vegetables ( oil, baby brinjal, potatoes, Onion, tomato, green chilli, garlic, turmeric and salt) and mix well.
Keep in high flame for 5 minutes and then in low flame for 10 mins till it turns aromatic.
(Do not open the lid in middle).
Step 3) After 10 minutes combine/mix well and mash it with a masher.
Step 4) Now add halved/broken cashew nuts.
Step 5) Mix well till oil seperates
Step 6) Finally garnish with coriander leaves.

Step 7) Serve hot with Roti etc.
