Corn & Peas Pulao is an instant and very simple dish wich can be made very quickly. This recipe is mostly loved by everyone. This dish is an kids friendly and can be given as their school lunch box. This corn pulao turns out to be sweet as the name itself tells everything that is sweet corn pulao. The key ingredients are sweet corn kernels and peas itself, no other vegetables are added. If you want you can make this pulao spicy just increase the measurement of spices as per your taste. Mostly while making Biryani/Pulao I dry roast all the dry spices and grind it dry without adding water such as bay leaf, cinnamon, cardamom, cumin seeds, cloves and black pepper as kids do not like those stuff. This dish is well combined with dal tadka, boondi raita, salad, pickle and papad these all are my personal favourite combinations. This is an instant recipe which can be made during any occassion or any other days without any hesitation.

Ingredients:
Corn: 1 cup (fresh/frozen)
Peas: 1 cup (fresh/frozen)
Onion: 1 medium (finely chopped)
Tomato: 1 medium (finely chopped)
Basmati Rice: 2 cups (washed and soaked for 30 minutes)
Oil: 2 tbsp
Water: 1 and half cup to 2
Salt as per taste/as needed
Roasted Masala Mix:
(In a kadai dry roast all the below ingredients and grind it dry without adding any water)
Bay Leaf: 2
Black Pepper: 2
Cardamom: 2
Cinnamon: 2
Cumin Seeds: 1 tsp
Cloves: 2
Masala Mix:
(You can increase the measurement of spices as per your taste.)
Turmeric Powder: 1/2 tsp
Red Chilli Powder: 1/2 tsp
Coriander Powder: 1/2 tsp
Garam Masala: 1 tsp
Kasuri Methi: 1 pinch (optional)
Method:
Step 1) In a pre-heated/hot pressure cooker add 2 tbsp oil then add finely chopped onions. Saute well till it turns light brown in colour, then add finely chopped tomato saute well till it turns soft and mushy.
Step 2) Now add the dry roasted and grinded spices (Bay leaf, Black pepper, Cardamom, Cinnamon, Cumin seeds and cloves). Mix well for a minute.
Now add masala mix (Turmeric powder, Red chilli powder, Coriander powder, Garam masala and Kasuri Methi). Mix well for a minute.
Step 3) Now add 1 cup corn and 1 cup peas. Mix well let it absorb all the masala flavours. After mixing well for 2 to 3 minutes add properly washed and soaked basmati rice. Mix well and add 1 and half cup water.
Check the consistency of water and you can gradually add little more water if needed.
Step 4) Close the pressure cooker lid and pressure cook for 1 whistle on medium flame. Open the pressure cooker lid once the pressure has reduced.
Step 5) After the pressure has settled down open the lid and garnish with fresh and finely chopped coriander leaves.
Delicious Corn & Peas Pulao Ready!!
Step 6) Serve hot with Boondi Raita/ Salad/Pickle/Plain Dahi/Yoghurt etc.
