Uniappam is a very popular snack in Kerala. In Malayalam 'unni' means small/baby 'appam' means rice cake. Basically unniappam is made from rice flour, jaggery, banana, roasted coconut pieces, sesame seeds oil/ghee and cardamom powder. It is also offered as prasadam in some temples in Kerala.

Ingredients:
Rice Flour Powder: 500 gms
Jaggery: 250 gms
Cardamom: 5 to 8 (powder)
Baby Banana: 4
Salt: 1/2 tsp
Sesame Seeds: 1 tsp
Coconut: 1 tbsp (chopped)
Oil
Ghee
Water as needed
Method:
Step 1) Firstly, in a small kadai heat 1 tbsp ghee and roast chopped coconut pieces till it turns light brown in colour.
Step 2) Now, in a pan take 250 gms jaggery and 1 tbsp water. Keep the flame on medium, stir well and dissolve the jaggery. Boil and bring it to a thick consistency and slightly cool the jaggery syrup.
Step 3) In a mixer add 5 to 8 cardamom with 1 tsp sugar blend it together so that it becomes fine powder.
After it becomes fine powder add 4 baby banana in mixer blend it to coarse paste without adding any water.
Step 4) Now in a mixing bowl add 500gms rice flour powder, strain the jaggery syrup and pour over it. Mix well till thick flowing consistency with no lumps in it. Once the consistency is thick add roasted coconut pieces, sesame seeds, cardamom powder, banana paste, salt.
Mix well with no lumps.
Note: Allow to rest the batter 5 to 6 hours/overnight
Step 5) Heat appam pan add 3/4 oil inside each holes/moulds. Now fill each holes/moulds with spoonful appam batter.
Step 6) Once the base turns golden brown in colour flip it over to the other side using spoon. Repeat the process till both the sides are cooked properly.
Yummy and Delicious unniappam ready!!
Step 7) Serve hot with tea. (Kids will definitely love this evening time snack.)
