Aloo Matar (Potato and green peas) is basically a famous punjabi dish made with potatoes and green peas in a thick tomato puree/paste and spices . It is a vegetarian dish. Aloo Matar is a spicy curry. The gravy is made thick and comparatively less water is added. This is easiest recipe, very simple and quickly made dish. Aloo matar is combined well with Roti, Naan, Puri, Rice, Jeera Rice etc. These all are my personal favourite combinations.
To make Aloo Matar ki Sabzi just skip adding water and folllow other steps aloo matar ki sabzi is ready!! So simple and easy.

Ingredients:
Onion: 3 (2 thinly sliced, 1 grind)
Tomatoes: 2 (grind)
Green Peas: 2 cups (1 cup grind)
Potato: 4 (medium sized, cube shape)
Ginger: 1 inch (finely chopped, grind)
Garlic: 7 to 8 (finely chopped, grind)
Green Chilli: 2 (finely chopped, grind)
Curd: 1 tsp (fresh)
Coriander leaves for garnishing (fresh and finely chopped for garnishing, grind)
Oil: 2 tbsp
Masala Mix:
Turmeric Powder: 1/2 tsp
Red Chilli Powder: 1 tsp
Coriander Powder: 1/2 tsp
Cumin Powder: 1/2 tsp
Garam Masala: 1/2 tsp
Sabzi Masala: 1/2 tsp
Pav bhaji Masala: 1 tsp
Kasuri Methi: 1 pinch
Salt as per taste.
Method:
Step 1) In a mixer grinder jar add sliced tomatoes, sliced onion, finely chopped ginger and garlic, 1 cup green peas, 2 finely chopped green chillis, few finely chopped coriander leaves. Do not add water while grinding. Make a fine and coarse paste and keep a side.
Note: The grinded paste will be a thicker one.
Step 2) Now in a pressure cooker heat 2 tbsp oil, add 2 thinly sliced onion saute well till it
becomes translucent.
Step 3) After the onion becomes translucent add the grinded paste and 1 tsp curd, mix well till the raw smell goes off and cooks well.
Step 4) Now add all the masala powders as mentioned above in the ingredients section (masala mix). Mix well till oil separates. The consistency of the gravy will be thick. You can add 1/2 cup water if you want to adjust the consistency.
Note: Do not add too much water as the gravy will become watery.
Step 5) Now add potato cubes and 1 cup green peas. Mix well.
Step 6) Check the consistency and add little water if needed. Now Close the pressure cooker lid and pressure cook for 2 to 3 whistles.
Step 7) After the pressure has settled down open the lid and finally garnish with fresh coriander leaves.
Yumm!! Yumm!! Delicious Aloo Matar is ready!!
Step 8) Serve hot with Roti, Naan, Paratha, Puri, Rice, Jeera Rice etc.
