Today, I decided to share the recipe of blueberry cheese cake. I adapted this yummy and delicious recipe from my friend Roshna Shaju. No doubt I must say she is an amazing and fantabulous home baker. I just fall in love with her baking skills.
Blueberry are flowering plants with blue or purple berries. Basically the size of blueberries usually varies.
Cheesecake is a sweet dessert consisting of one or more layers. The main layer consists of cheese (usually cream cheese). Bottom layer consists of crust or a base made from crushed biscuits. It is usually refrigerated. It is usually sweetened with sugar and flavored in many different ways. In our cake recipe we are adding lemon juice for flavour and finally blueberry filling (toppings).
Total Preparation Time: 5 hours 30 minutes
Serves: 10 -12 pieces

Ingredients:
Gelatine :3 tsp.
Cream cheese: 200gms
Whipping cream :200ml.
Powdered sugar: 100gms + 3 tsp .
Blueberry: 200gms
Lemon juice : 2 tsp.
salted biscuits: 15
Melted butter : 100gms salted.
Method:
Firstly, melt 2 tsp of gelatine for few seconds on low flame . Keep it aside for cooling down.
For making the crust or the cheese cake base.
Step1) Add 15 number of any salted biscuit into a blender .Blend it coarsely .transfer it to a bowl. Add 100gms of salted melted butter and mix it well.
Step2) Transfer it in to a 6 inch spring form mould . Spread it evenly. Press the base tightly with the help of the glass or bowl . Refrigerate for 30 minutes .
For making the second layer:
Step1) Take 200ml of whipping cream beat it using a hand blender until it reaches to stiff peaks or soft peaks.
Step 2) Take 200 gms of cream cheese . Beat until smooth. Add 100gms of powdered sugar . Mix until everything is well combined.
Step 3) Add whipped cream and mix it well.
Step 4) Now add the melted gelatine which was kept aside for cooling . Mix it for a few second .
Step 5) Pour this mixture into the cake tin. Tap it gently to remove air bubbles. Refrigerate for 4hours .
For making the third and the last layer (blueberry filling) :
Step1) Add 200gms of blueberries into a sauce pan . Add 100ml of water. Add 3tsp sugar. Stir it. Add 2tsp of lemon juice . Cook for 2 to 3 minutes. Add 1tsp of gelatine. Give it a nice stir and cook for 1 minute on low flame .
Step 2) Remove from flame. Pour the cooled sauce over the cheese cake which was kept for setting. Refrigerate for 1 hour.
Yum, Yum delicious blueberry cheesecake is ready!!
