Idli is basically a type of steamed rice cake. The key ingredients to make idli is black lentils (urad dal) and rice. Rice and Urad dal are washed and soaked (both separate) in water for 4 to 5 hours then it is grinded till fine and smooth consistency batter in a mixer grinder. Basically to make a smooth flowing batter the rice is grinded separate and urad dal is grinded separate. Idlis are made with a fermented batter the whole fermenting process takes overnight. The next day idli batter is poured into the idli mold. Idli molds are placed one above the other. Then it is steamed in idli cooker or pressure cooker for 10-15 minutes till its cook well. There are few variations in idli mold medium sized mold and mini idli mold.

Ingredients:
Idli: 5 to 10 (cube/square shaped)
Oil: 1 tbsp
Mustard Seeds: 1 tsp
Cumin Seeds: 1 tsp
Curry Leaves: 6 to 8
Dry Red Chilli: 2 (whole)
Urad Dal: 1 tsp
Onion: 1 Medium (finely chopped)
Tomato: 1 Medium (finely chopped)
Turmeric Powder: 1/2 tsp
Red Chilli Powder: 1 tsp
Pav Bhaji Masala: 1 tsp
Garam Masala: 1/2 tsp
Coriander Leaves For Garnishing
Salt as needed
Method:
Step 1) In a kadai heat 1tbsp oil, add mustard seeds let it splutter then add cumin seeds let it change its colour then add curry leaves, urad dal and whole dry red chilli. Mix well.
Step 2) Add onion saute well till it becomes transparent/light brown in colour then add tomato saute well till it turns soft and mushy.
Step 3) After tomato cooks well then add 1/2 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp pav bhaji masala, 1/2 tsp garam masala and salt. Mix well till raw smell goes off.
Step 4) Now add fresh/leftover chopped idlis (cube/square shaped). Mix/combine well till it absorb all the masala flavours.
Step 5) Finally garnish with finely chopped fresh coriander leaves.
