Mix Veg Pulao the name itself describes everything that it is a mixture/combination of vegetables. The key ingredients are all the vegetables. You can add any vegetables as per your choice. To make pulao basmati rice is used (mostly soaked). Veg Pulao is one such dish which is most commonly liked by all and which all can make instantly without any hesitation. Mostly each and everyone have different style to make pulao some of them use cashew, raisins or whole spices such as cardamom, cinamon, star anise, black pepper, clove, bay leaf etc. dry roast them and grind them dry without water, some of them only use the readymade pulao masala etc. That is each and everyone have their own style of making pulao. Pulao with the combination of boondi raita/spiced yoghurt/plain dahi is just yumm and very authentic. It is usually served in wedding and other occasions. It is not that it is not made at home regularly , mostly it is made during weekends and any other special occassions. I make pulao mostly during every weekends.

Total Preparation Time: 45 Minutes
Carrot: 1-2 (finely chopped)
French Beans: 7 to 8 (finely chopped)
Potato: 4 (medium sized, cube shape)
Green Peas: 1 cup (fresh/frozen)
Cauliflower: 1 cup (medium Sized)
Basmati Rice: 3 cups (Washed & Soaked) 10-15 minutes.
Tomato: 2 (medium sized, sliced)
Ginger: 1 inch (finely chopped)
Garlic: 5-6 (finely chopped)
Coriander Powder: 1/2 tsp
Pav Bhaji/Chole Masala: 1/2 tsp
Biryani Masala/Pulao Masala: 2 tsp
Coriander Leaves For Garnishing (fresh and finely chopped)
Salt as needed/as per taste
Step 1) In a pre-heated/hot pressure cooker/cooking pot add 3 tbsp oil then add thinly sliced onion, saute well till it turns transparent.
Step 2) In a mixer grinder jar add tomato, ginger, garlic and curd blend all together with little water make a fine coarse paste and keep a side.
Step 3) After onion turns transparent add the finely blended paste/puree.
Stir well till raw smell goes off.
Step 4) Now add the masala mix (turmeric powder, red chilli powder, coriander powder, garam masala powder, pav bhaji masala/chole masala, kasuri methi). On a medium flame mix well for 2 to 3 minutes then add biryani masala/pulao masala and salt. Mix well for a minute.
Step 5) Add all the properly washed and minced/diced vegetables (carrot, french beans, green peas, potato and cauliflower). Combine well and let the vegetables absorb all the masala flavours.
Step 6) Now add properly washed and soaked basmati rice. Mix well and add 2 cups water. Adjust the water level or consistency and salt if needed and stir well.
Step 7) Close the pressure cooker lid and pressure cook for 1 whistle on medium flame. Open the pressure cooker lid once the pressure has reduced.
Step 8) After the pressure has settled down open the lid and garnish with fresh and finely chopped coriander leaves.
Yummy and Delicious Mix Veg Pulao is ready!!
Step 9) Serve hot with Raita/Dahi.
