Today marks the end of year 2020 and here is my last recipe for this year. Seriously the year 2020 was such a tragic and traumatic year that no one can ever forget in their life. Those strict 6 to 7 months lockdown and those struggles everyone was facing I can't even imagine those days again. Mask and Sanitizer have now become an important and integral part of our life without which we cannot go anywhere. I remember during those lockdown days seriously I was even afraid of peeping out of the window. This pandemic situation has made us realise the value of many things in our life even small to small things. Thanks to God for what we have and keeping us sound and safe.
I would like to thank my parents for what I am today due to their constant support, love and blessings. I would also like to thank my relatives and friends who have supported, encouraged and helped me during my hard times.
Hoping for normal, better and good times back in life.
So today on new year's eve I decided to share the recipe of plum and rum cake. I adapted this recipe from my relative (Mini Menon & Beena Menon).
Plum cake is made with dried or fresh fruits, nuts, spices, flour etc. Basically the dried/fresh fruits are soaked in spirits. There are many varieties in plum cake such as fruit cake, iced fruit cake, gluten free fruit cake, lactose free cake etc.

Total Preparation Time: 1hr 30minutes
Serves: 10 -12 pieces

Ingredients:
FOR SOAKING DRY FRUITS :-
Plum: 100 gms
Dates: 100 gms
Black Seedless Raisins: 50 gms
Golden Raisins: 50 gms
Mixed Berries: 100 gms
Rum/Orange Juice: 1/2 cup
FOR MAKING PLUM AND RUM CAKE BATTER:-
Sugar: 1/2 cup
Water: 1/2 cup
Egg: 3
Oil: 1/2 cup
Powdered Sugar: 1/2 cup
Vanilla Essence: 1 tsp
All Purpose Flour / Maida: 1 and 1/2 cup
Baking Powder: 1 tsp
Baking Soda: 1/2 tsp
Nutmeg: Small piece (powder)
Cloves: 3 (powder)
Cinnamon: 1 inch (powder)
Cardamom: 5 to 6 (powder)
Almond: 2 tbsp (chopped)
Cashew: 2 tbsp (chopped)
Method:
For Soaking Dry Fruits:-
Step 1) Firstly, in a glass jar cut dry fruits ( plum, dates, black seedless raisins, golden raisins, mixed berries) you can put whatever berries you get but dates, plum and raisins is more important. Orange zest (outer peel of the orange).
Note: Quantity of dry fruits has to be equal to or more than the maida/all purpose flour (to be used) as this brings great taste to the cake.
Step 2) Mix well and soak all ingredients in rum or orange juice overnight or as many days as you can.
For Plum And Rum Cake Batter Preparation:-
Step 1) Firstly, take half a cup sugar and heat it in a heavy bottom pan in slow to medium flame and once it is caramel colour put half a cup boiling water.
Note: Kindly stay away from the pan as it tends to splash.
Step 2) Take 3 eggs and whisk in a bowl add half a cup oil and caramel syrup which we made earlier and keep mixing and beat till smooth consistency add half cup powdered sugar and 1 tsp vanilla essence keep whisking for around 5 minutes till it becomes a smooth batter.
Step 3) Simultaneously in a sieve add 1.5 cups all purpose flour/maida in that add 1tsp baking powder and half spoon of baking soda and spice powder ( small piece nutmeg, 3 cloves, 1 inch of cinnamon, 5 to 6 cardamom seeds ) to separate lumps. Add this mixture to the batter and using a spatula mix it with cut and fold method. Once it is mixed well add the soaked dry fruits and add chopped almonds and cashews and again combine it.
Step 4) Meanwhile pre heat cooker for 5 to 10 minutes in high flame ( without whistle and ring) and also apply butter and line the container with butter paper.
Step 5) Now pour the batter in the container and tap it well so that air bubbles does not form.
Step 6) Cook it in high flame for 5 minutes and then reduce the flame to medium and cook for around 55 minutes to an hour and after 50 minutes just check it with a tooth pick to see if it is coming out clean.
Step 7) Once done immediately remove from cooker. If you have soaked the dry fruits in rum to add more flavour just add maximum 1 or 2 spoons of rum in small cracks so that it absorbs to make it more moist.
